Cauliflower
I convinced Andrew the other night that he needed to try a
food that I fixed. It was one of those things I knew if he knew what it was
initially he would not try it or be even more reluctant. I cooked it up and
chopped it differently than normal and added bacon because to him everything is
better with bacon and I actually did not put cheese on it which was shocking
with the amount of dairy that we consume at the house.
Anyway he tried it and
ate all of it and twice said could we have that again. What is this you asked
that I fixed?
It was cauliflower.
I know crazy but I diced it up pan seared it
with a bit of olive oil and let it get a little brown and roasted. Then I added
some seasoning salt and seared it a bit more and put it in a baking pan. I
threw some bacon on top of it with some Panko crumbs and let it bake together
in the oven a little longer and it all molded together and it was actually
really yummy.
He ate it twice for lunch last week and will have it for lunch
today and probably tomorrow for dinner if I am actually good and finally get to
the grocery store. So success one more vegetable in the mix of our eating, one
more that I have never cooked successful for at least one recipe. I will take
it.
