Chicken Cordon Blue Casserole

So we made a dish a few nights ago that I have always wanted to try. Of course, you know me we had to have a different spin on it because I don't do anything by the true recipe. Let's be honest. 
So we wanted to make the Chicken Cordon Bleu Casserole. Similar to the one on Skinny Mom  
However, you know how things work at my house it never really goes as planned. 
So we had chicken stew and there was TONS left over. 

I mean a bunch! 

It was so packed with chicken one night I pan fried the chicken in a patty form and had a great Chicken Sandwich with lettuce and some mayo, yum yum. The next night we wanted to try our own so here we go. 

We took out the chicken from the stew drained it but still left it really moist because I knew that it would cook some of it out. Put in the bottom of a 9x13 pan and then added just a bit more "stew" in it to make sure it would not be dry. Then we love some sauces at Chick-fil-a so I had some extra honey mustard from one of our chicken sandwich runs and put two containers of that on top of the chicken. Looks gross but it was already making my mouth water. 


The next thing we did was just add sliced deli Ham. I had bought some deli meat on sale at the store and it needed to be used so it was a great way to enjoy it and have what I needed. We layered it on top. Then we layered on top of the ham a layer of our favorite Colby Jack Cheese which I buy sliced by the pound (we love that stuff). 


After all layered, we then put both panko bread crumbs and italian bread crumbs on top to give it some flavor. Put it in the oven at 350 till hot and bubbly. It didn't take long and the great thing is every ingredient that we used we could eat already so we didn't have to make sure anything was cooked through. 

The round circles you notice in the picture below was the cheese I was even too lazy to break it up into pieces but it helped decide the perfect portion amount. 

Serve it up with some broccoli and a salad and we were in business. So yummy. 
Great idea to use our leftovers for a new meal from the fridge and not be wasteful.
